How to Make Perfect Dodo

Select Your Plantains

Choose plantains with black spots for the perfect balance of sweetness. Yellow with spots = balanced sweet-savory. Fully black = very sweet and softer. Never use green plantains for dodo (those are for chips).

Cut the Plantains

Peel the plantains and slice diagonally, about 1/2 inch thick. The diagonal cut gives you more surface area, which means more caramelization and crispy edges.

Fry (Traditional Method)

Heat oil in a pan over medium heat. Test with one piece - it should sizzle gently, not aggressively. Fry in a single layer, 2-3 minutes per side. They should be golden brown with dark caramelized edges.

Air Fryer Method

Spray plantain slices lightly with oil on both sides. Arrange in a single layer in the air fryer basket. Cook at 380F for 10-12 minutes, flipping halfway through. They'll be slightly less oily but just as delicious.

Serve

Drain on paper towels briefly. Serve immediately while hot and crispy. A pinch of salt is optional but helps balance the sweetness.
